maple isn't just for breakfast

i really like sweet things, but not in the way most people do. i actually have a low tolerance for sweets so i like to mix a little sweet in with other things. i don't want to gorge on a whole pie; i'd rather toss some raisins into a caserole. at the same time, andrew really watches his carbs making sweets quite a challenge in our household. i was thrilled when we found a sugar free maple syrup at walmart. its great on pancakes and lots of other stuff too!


maple glazed salmon

1/4 cup maple syrup
2 T soy sauce
1 clove garlic, minced
1/4 t garlic salt
1/8 t ground black pepper
1 pound salmon



in a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper. place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. cover and marinate salmon in the refrigerator 30 minutes, turning once. bake salmon uncovered at 400 for 20 minutes, or until easily flaked with a fork. enjoy!
